Make Your Own Organic Chicken Nuggets

If you are anything like me, you have searched everywhere for an affordable frozen chicken nugget that competes with the flavor of the big name brands. My kids are picky eaters and I am sorry to say they like their chicken nuggets. The organic nuggets I have been successful in locating are usually around $7 for a small box. So today we set out on a taste testing frenzy to find a recipe using organic chicken that will save money and be easy enough to make ahead in big batches and freeze. Imagine the excitement when I got it right the first try! Here is my money saving combination of ingredients.

Organic Make Ahead Chicky Chicken Nuggets

1/2 Cup Oatmeal
1 pound organic free range chicken cooked and chopped to mash or food processed
1/2 Cup canned Organic squash puree
1/4 cup shredded cheese (we used Colby jack)
1/4 cup milk
1 teaspoon salt
1 teaspoon onion powder

In one bowl place...
2 eggs, beaten and mixed with a splash of milk

In another bowl place...
1 cup each panko bread crumbs and organic white flour

Heavily grease two cookie sheets and preheat oven to 375 degrees.

Combine first seven ingredients in a bowl and mix. Mixture will look like dry meatloaf, roll into balls and then shape into nugget ovals of choice (this is very important if you want your picky eater to taste, choose the correct shape for your nugget), dip in egg wash and then bread crumbs. Place nuggets on greased cookie sheet for baking. Bake in 375 Degree oven for 8 minutes, turn and bake on second side for 8 more minutes. Nuggets will firm up to expected consistency as they cool. Freeze in zip lock bags for reheating later.

When the nuggets first came out of the oven they were popular but they gained in popularity as they cooled and became more firm like traditional chicken nuggets.

If your child doesn't prefer these #money saving chicken nuggets over their favorite brand at first don't get discouraged, it takes an average of 7 to 11 introductions before a child becomes familiar with a new food.

How I became Considering frugal

Fueled by the growing list of pollution related allergies my family suffered from each day and inspired by my 97 year old grandmother who could recycle ANYTHING before recycling was cool, back in 2011, I decided (in the spirit of the Julie/Julia Project...) to embark on a journey to see just how much one family could do to change our planet.
