Hearty Meatless Meals/ Cheesy Hash Brown Quiche

The Best Thing I Ate in France
Remembering my first taste of quiche as a teen in France, I picked up a loaf of Country French Bread at the local grocery to eat with this dish. It was a huge hit. My hubby ate leftovers for breakfast and took a second helping in his lunch. If you prefer a more traditional recipe then use the filling and put it in a prepared pie crust; bake it longer at the lower temperature.

Cheesy Hash Brown Quiche

2 cups Simply Potatoes Shredded Potatoes

1/2 stick organic butter, melted
3 Large organic eggs
1 teaspoon dried parsley
1/2 teaspoon salt
1 cup organic milk
1 small organic zucchini, chopped (According to the Non-GMO Project, zucchini is a high risk produce, always buy organic zucchini.) You can also substitute any fresh green veggie of the same consistency that you prefer.
1 clove garlic, minced
1 cup thick sliced mushrooms (slice them thick so they bite like soft meat)
1 cup shredded Colby Jack cheese
Olive oil

Toss potatoes with melted butter and press in pie plate just like a pie crust, sprinkle with salt. Bake in preheated oven @ 450 degrees for 20 minutes. Saute zucchini, mushrooms and garlic in a little olive oil and sprinkle with salt. In large mixing bowl mix eggs, milk, cheese, spices and veggies, take crust out of oven and add mixture to crust; return to oven and bake an additional 30 minutes @ 350 degrees. It took me back to that little French bistro that looked something like this...

How I became Considering frugal

Fueled by the growing list of pollution related allergies my family suffered from each day, and inspired by my 97 year old grandmother who could recycle ANYTHING before recycling was cool, back in 2011, I decided (in the spirit of the Julie/Julia Project...) to embark on a journey to see just how much one family could do to change our planet. I didn't consult any other parties before I launched this idea. Thankfully my husband, daughter and son are usually my biggest supporters. Here is the catch; as I'm normally very thrifty (you can note from early blog posts), I was looking for ways that I could reduce our carbon footprint and make socially responsible purchases without increasing our spending. Mmmmmm. We succeed in changing some of our habits a bit and finding ways to reduce our footprint. There were lots of fun epic fails alone the way too!
